honey preserved dandelion blossom spread

Dandelions are one plant I have always loved since I was a kid. Over the years I have deeply missed the plentiful blooms of this plant out west. They are starting to sprout up all over here in New England so I am collecting any and all dandelion recipes to try this year!

I am going to make some of this honey preserved blossom spread over the weekend! Has anyone tried this recipe?

  1. Yep, I've done this (although I didn't know it was a recipe, I just thought it was infused flower honey) and it's great. I do the same thing with roses and elderflowers and violets and cherry flowers and apple blossoms and any other yummy flower I can get my paws on. Good to mix and match too, there's nothing quite like violet and dandelion honey!

  3. Ok, we made some violet and dandelion honey today! It is sitting now infusing for the next few days. :)

  4. Do you strain the dandelion petals after the infusion process? If so, how? Dandelion petals are pretty delicate, even moreso after sitting in honey for 3 days :)
